Tasting
Situation: a fantastic terroir, just under grand cru Bonnes Mares, on the Morey-St-Denis side, at mid slope.
Savoir-faire: traditional vinification with manual cap-puncheing. Three weeks of cuvaison. Little part of whole bunches. Gravity cellared for ageing. 25% new oak.
Nose: subtle mix of red and black berries followed by little spicy notes (tobacco, white pepper). What a great delicate wine with huge complexity!
Mouth: silky texture, soft but present tanins. A work of delicacy and elegance in a true Chambolle style. Outstanding finish that goes on and on…
Food matching
Peking duck, slow-cooked lamb with rosemary, mild cheese
