Tasting
Nose: a «modern» Meursault in its typicity, without excesive opulence. Very nice balance where maturity does not override freshness.
Mouth: dried fruits, balanced by citrus and floral creaminess.
Food matching
Smoked salmon, creamy sauce poultry, matured mountain cheese.
History
Situation: small plot (not even half an hectare!). 35 years old vines. A rare wine (less than 2 000 bottles per year in average).
Savoir-faire: hand-picked Chardonnay grapes brought in small baskets to our winery in Beaune. Tradition vinification and ageing in 228 litres oak barrel (around 30% new oak, mainly from the Vosges region with middle-size grain.)
