Tasting
Situation: a plot typical from Savigny terroir, with a soil full of little rocks (cailloutis) that bring up minerality. 30 years old vines
Savoir-faire: hand-picked Pinot Noir grapes. Traditional vinification with manual cap-puncheing. Three weeks of cuvaison. Gravity cellared for ageing.
Nose: mix of red and dark berries (cherry, blackcurrant). Easy and delectable.
Mouth: fresh red fruits. Nice tannic structure that will soften during ageing and with time. Final flavours of cherry. Yummy!
History
A very interesting village at the Northern end of Côte de Beaune, though with already first hints of Côte de Nuits spicy complexity.
A mouth-watering, fleshy wine with good body. Excellent day-to-day friend!
